This is a very flavorful, healthy, and simple stew that comes together quickly. The smoked paprika gives it just enough kick. This stew costs $.60 per serving to make. If you want to get fancy you can add some chopped cilantro and a dollop of plain Greek yogurt or dairy-free yogurt.
Ingredients:
1 tbs. olive oil
1 cup chopped onion
2 carrots, chopped
3 celery stalks, chopped
1 tsp. smoked paprika
½ tsp. sea salt
¼ tsp. cumin
3 cups chicken broth
1½ cups dried red lentils
- In a soup pot, sauté the onion, carrots, and celery in olive oil until tender.
- Add the seasonings and cook for another minute, stirring constantly.
- Add the broth and the lentils.
- Bring to a boil and then lower the heat to simmer for 10 to 15 minutes. The stew is done when the lentils are tender.

I adore red lentils and this sounds delicious.
It is delicious. So delicious, in fact, that I burned my tongue taking a taste out of the pot even though I knew it would be too hot.

This would work with yellow lentils too, but I like that the red ones are a bit more delicate. Enjoy!
