On Mother’s Day, when I could ask for any dinner I wanted and my husband would make it, this is what I requested. We don’t eat a lot of red meat in our house, but when we do, this is my favorite way to eat it. Instead of steaks for everyone, we get one high-quality sirloin steak, grill it, and serve it sliced on a big mound of salad. The light citrus dressing is perfect, and the mango gives this salad a sweet touch.
Ingredients for the Salad:
1 lb. sirloin steak
1 head butter lettuce
4-5 large spinach leaves
3 scallions
1 red pepper, sliced in strips
1 mango, sliced in strips
1 avocado, sliced in strips
2 tsp. sesame seeds
Ingredients for the Dressing:
1 tbs. lemon juice
1 tbs. lime juice
2 tbs. olive oil
1 tbs. honey
½ tsp. salt
- Grill the steak to your liking. Depending on thickness, it should take about 5 minutes per side to achieve a medium-rare steak.
- Let the steak cool, and then slice it into thin strips.
- Wash and chop the lettuce and spinach. Place them in a large salad bowl.
- Add the chopped scallions and the sliced red pepper, mango, and avocado. Place the sliced steak on top.
- Mix the dressing ingredients together. Dress the salad just before serving, and sprinkle each portion with a half teaspoon of sesame seeds.
Price Breakdown
This meal is a big splurge in my house, although it would cost a lot more for us to serve up four steaks instead of one. The total cost of this meal is $15.13, with the steak accounting for more than half of that price tag. This salad yields 4 adult-sized portions, and each portion costs $3.78. I could have bought cheap steak and saved some money, but this is an area where I think it pays to buy the highest-quality food. It’s a lot cheaper to have a meal like this on a special occasion than to go out to a restaurant. And at a restaurant, I wouldn’t have been able to order this very salad, which was exactly what I wanted on Mother’s Day!
