½ cup sliced strawberries
¼ cup walnuts
¼ cup basil
¼ tsp. diced garlic
1 red pepper, chopped
½ tsp. salt
1 tbs. olive oil
1 medium head butter lettuce, chopped
4 scallions, diced
- In a food processor, make the pesto by combining 1 tablespoon of strawberries, the walnuts, the basil, the garlic, 1 tablespoon of red pepper, salt, and olive oil.
- In a large salad bowl, toss together the lettuce, scallions, remaining strawberries, and remaining red pepper.
- Divide the salad among four salad bowls, and top each salad with a tablespoon of pesto.
