Slaw Three Ways

I try to eat five servings of fruits and vegetables every day, but sometimes when life gets busy the fruits and veggies suffer.  When I know I have an extra busy week coming up, I like to make a big batch of slaw at the beginning of the week.  I add it to my plate at lunch or dinner, and sometimes I have it for a mid-afternoon snack.  It may sound strange to eat slaw as a snack, but it’s really just a salad variation.  It can sit in its dressing for several days, which makes it a great convenience food.  Click on the pictures below to see three different vegetable and dressing combinations that my family enjoys.  Full of color, flavor, and nutrients, fresh slaw is a delicious way enjoy produce in the winter.
