I like to use coconut milk as the base for chia pudding. There’s no need to buy coconut milk when you can make your own for just $.14 a cup. Here’s a quick video showing you just how easy it is to make your own coconut milk.
Apple Pie Chia Pudding
- 2 cups coconut milk
- 1/2 cup apple cider
- 2 tbs pure maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 1/2 cup chia seeds
- 1 apple cored and diced
- 3 tbs diced walnuts
In a large bowl, mix together the coconut milk, apple cider, maple syrup, cinnamon, nutmeg, ginger, and salt.
Stir in the chia seeds. Whisk the mixture every couple minutes for 10 minutes, then refrigerate.
To serve, divide the chia pudding into 4 bowls and top with diced apples and walnuts.
