Chickpeas are a great source of protein, and this easy chickpea salad is a delicious way to enjoy them. I love how these flavors taste together. Sundried tomatoes are my favorite complement to this salad. It tastes great warm, but you can also enjoy it cold out of the fridge the next day.

Easy Chickpea Salad

- 2 cups cooked chickpeas
- ⅔ cup chopped cucumber about 1/4 lb.
- ½ cup dried tomatoes
- 2 scallions chopped
- ¼ cup full-fat coconut milk or Greek yogurt
- ½ tsp salt
- ⅛ tsp smoked paprika
Place the cooked chickpeas, cucumbers, dried tomatoes, and scallions in a large bowl.
In a small bowl, stir together the coconut milk, salt, and smoked paprika.
Pour the dressing over the salad and stir to coat evenly.
Serve immediately or refrigerate in an airtight container.
