These raspberry blondies are one of the first things I made when my raspberries started coming in this summer. I love raspberries in anything, but especially a sweet treat like this one. If you want a bigger batch, you can double the recipe and bake it in a 9×13 inch pan. This tastes just as good with gluten-free flour, so substitute it 1 for 1 if needed.
- 1 cup white whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup raspberries
Preheat the oven to 350 degrees and grease an 8x8 inch baking dish.
Combine the first three ingredients in a medium bowl.
Combine the remaining ingredients, except the raspberries, in a large bowl. Add the dry ingredients and stir to combine.
Fold in the raspberries.
Pour the batter into the prepared pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
Cool completely on a wire rack and then cut into 9 squares.
