It’s the last full week of summer vacation before my kids head back to school. This is a bittersweet time of year, and we’re trying to make the most of it.
I wish we could get away one more time this summer. It’s not realistic, though, so we’re planning a trip to the Boston Harbor Islands one day. We’ll stop at the Boston Public Market for a picnic lunch. They have so many amazing local goodies there.
Dinners will be some old favorites this week. We haven’t had hard taco shells in a while, and my daughter has been requesting them. We’ll use Trader Joe’s 3-ingredient taco shells with our typical fillings this week. The weather is still hot, so we’ll use the grill on several nights. I’m looking forward to serving a side dish of cauliflower pancakes with barbecue chicken tonight. It’s one of the few ways my children will eat cauliflower without a complaint.
