We’re moving into tricky schedule mode again this week as my son’s basketball season begins. He has lots of evening games, so dinnertime will be choppy some nights. I love turning to my slow cooker for challenging nights like these. The slow cooker apple chicken curry is one of my favorites, so that’s on the menu for a couple nights this week.
I’m also trying a new slow cooker recipe from the 100 Days of Real Food cookbook. The slow cooker flank steak fajitas look delicious. I’ve never made fajitas at home, but we always love them at Mexican restaurants. We’ll make enough so we have leftovers for a second meal.
At the end of the week, I’m going easy on myself with pasta one night, omelettes the next, and a family night out on Friday. Sometimes it’s all I can do to get dinner on the table throughout the week, and a break on Friday is just what I need.
