Happy New Year!
I’m starting out 2017 with a new kitchen toy. I got an Instant Pot for Christmas. I’ve never used a pressure cooker before, but this machine is more than just a pressure cooker. It takes the place of my slow cooker (which was cracked), and also serves as a rice cooker, yogurt maker, and several other things.
Honestly, I’m a bit afraid of this thing. There’s a learning curve with a new appliance like this, so I have lots of reading and experimenting to do. We’re trying out a barbacoa beef recipe from Skinnytaste this week. I’ll serve it with rice and corn salsa for a burrito bowl experience.
Before diving into the Instant Pot experiments, we pulled out our fondue pot for New Year’s Eve. My family has a tradition of making cheese fondue and chocolate fondue for dinner on the last night of the year, so we did that again this year. It’s a fun indulgence that we all enjoy, but now I need a break from dairy for a bit.
