I’ve been having fun experimenting with my new Instant Pot. It makes rice to perfection, so we enjoyed homemade burrito bowls with rice and barbacoa last week. This week, I’m trying out a Hawaiian fried rice recipe that I’m hoping I can make using only the Instant Pot. If it goes well, I’ll post the recipe.
It was my birthday on Sunday, and I requested the same meal I always request if we’re home for a special occasion. This mango avocado steak salad is full of so many delicious flavors. The only thing missing is chocolate, but the birthday cake took care of that.
And later in the week, we’ll be having some cozy winter meals. Butternut squash chili is one of my favorites even though I don’t usually love squash. My kids would be happy eating pizza all week long, so I’m making a batch of pizza soup with homemade breadsticks. It’s always nice to mix things up a bit!
