We’re starting off the meal plan this week with leftovers from the end of last week. I’m trying to leverage leftovers more often, and it’s been working pretty well. I just need to put away half the batch of food before I serve the meal on the first night. That way, we all get enough to eat for dinner, but we don’t over-stuff ourselves with extra portions that can be saved for another night.
I’m looking forward to trying the Cheesy Southwest Beef Potato Skillet that I found at Aggie’s Kitchen. I think I’ll be able to get away with zucchini in this context. Hopefully this will be a dish that everyone in my family will enjoy. Later in the week, I’m making a lentil sweet potato casserole that my kids haven’t loved in the past. Hopefully they’ll give it another try with an open mind. Even if they don’t like something the first time I make it, I keep trying. You never know. 🙂
