We’re coming off a ski weekend in Vermont. It was great to get a break from cooking for a couple days while we enjoyed lots of locavore food at Okemo. Stay tuned for the details later in the week about this great family-friendly ski resort.
I’m back to cooking now, and we’re sticking with mostly tried-and-true recipes this week. In the midst of winter, homemade pizza, pasta, burgers, and taco night are some of my defaults. And my whole family enjoys sweet potato hash with fried eggs for a hearty meal. Who doesn’t love breakfast for dinner?
The one new dish on this week’s menu is a chicken stew that I’ve been playing with in my Instant Pot. I’m experimenting with different cook times and flavor combinations. It will be good to have a just-right chicken stew recipe to go along with my beef stew.
