We made it to March! I’m always so happy when this time of year arrives and spring is just around the corner. Since my son is between sports seasons, dinnertime gets a little less hectic over the next few weeks in my house.
We’re having some easy favorites for dinner this week. The meal plan is a bit Italian-heavy, with pasta, pizza, and calzone on the menu. I’m also planning to make salmon despite the complaints I get from my kids when it’s on the menu. I may do some research and try a new topping to see if that makes a difference. I’d love to hear your suggestions in the comments.
And I’m experimenting with my Instant Pot again this week. I’d like to have some more vegetarian meals in our dinner rotation, so I’m hoping the easy beans and rice recipe will be successful.

Wednesday: Homemade Pizza, Green Salad
Thursday: Chicken Chili
