We have a choppy week coming up at my house. With a couple parties on the agenda as well as tech week for my daughter’s play, there’s actually only one night when we’ll all be eating together.
Despite this strange schedule, we still need to eat. For nights when one child or the other isn’t home, I tried to think about meals that the who’s at home likes but the other one doesn’t like. (I’m probably making this more complicated than I need to.) I came up with a menu that should work for everyone – fingers crossed.
For the one night when we’re all together at dinnertime, I’m trying a new recipe. I saw the sweet potato waffles from Fit Mitten Kitchen on Instagram, and I knew I had to have them. I’m curious how this paleo, Whole30 recipe will work out, and I’m nervous the waffles will stick to the waffle iron. But I’m going to try it because it looks really good.
