Another week, another meal plan!
I’m looking forward to having my daughter home for dinner this week now that her play is over. I put one of her favorites on the menu – homemade macaroni and cheese. I tried this recipe a few weeks ago (I substituted a few ingredients to make a real food version), and my kids said it tasted like “good” macaroni and cheese that you’d get at a nice restaurant. I’m happy that they prefer this version to the boxed stuff.
I’m trying a couple new recipes this week. The Instant Pot sweet and sour pineapple chicken from Zen and Spice looks really good. It’ll be a quick, easy dinner for a busy weekend night, and I think my kids will love it. And the breakfast tacos from Nourish Nutrition Company look delicious, too. I love trying recipes from my fellow healthy food bloggers. It’s good to know I’m not the only one trying to find quick, nutritious meals to put on my family’s dinner table.

Wednesday: Pasta with Meatballs, Green Salad
Thursday: Chili Lime Salmon, Ginger Lime Slaw
Friday: Burgers, Smashed Potatoes, Green Salad
