We made it through last week’s hectic dinnertime schedule unscathed. The barbecue chicken calzones were a lifesaver on a couple nights when we had to drive from one sports field to another during dinnertime. It was great to have something easy to eat in the car.
This week, I’m trying chicken burrito bowls from Food Faith Fitness for a portable dinner one night. I always order burrito bowls when we go to Chipotle or another quick-serve Mexican restaurant. I’m guessing the homemade version will taste even better.
I’m looking forward to trying a new cauliflower rice recipe this week. The southwestern cauliflower rice casserole from Nutritioulicious looks so good! I’m hoping my kids will tolerate the cauliflower since it’s surrounded by cheese and other goodies that they normally like. I’m always on a mission to convert them into cauliflower fans. Fingers crossed!
