Happy Memorial Day!
With the unofficial start of summer, I’m looking forward to getting more veggies into my family. Our farm share started up a couple weeks ago, and we’re getting lots of greens. Honestly, it’s hard to keep up when I have a fridge full of kale, spinach, arugula, bok choy, and two kinds of lettuce. But I’ll be serving a side of greens with just about everything this week and hoping for the best. I can always puree the spinach and freeze it for green smoothies.
I’m looking forward to trying some new recipes this week.The peach salsa rice bowls are the type of thing I like to order in a restaurant, and I’m guessing the homemade version will be even better. And the broccoli cheese frittata muffins from Aggie’s Kitchen look like a great convenient meal for our busy sports nights. I’m sure the kids will love them.
