And just like that, it’s June! We’re in the final stretch of the school year, and summer vacation plans are starting to take shape. But we still have a few weeks left in our regular routine, so I need a meal plan to stay sane during this busy time.
The greens continue to come fast and furious from my farm share, and I’m doing my best to keep up. There are lots of salads and kale chips on the menu this week. I’m also making spinach calzones for a picnic dinner later in the week.
I’m also experimenting with a couple new recipes. I think the Instant Pot Hawaiian Sloppy Joes will go over well with homemade slaw. And the grilled chicken bruschetta from SkinnyTaste looks so good. My family will definitely enjoy the topping.
