We have a birthday in the family this week. It’s hard to believe my little girl’s going to be 12. She requested dinner out to celebrate, so that’s what we’re doing. I never complain about a night off from cooking.
During the rest of the week, we’ll be having light dinners now that the weather is finally warming up here in Massachusetts. My whole family enjoys the spring cobb salad, so that’s making yet another appearance on the menu. And I’m working on a peach mango burrito bowl recipe, so we get to sample the latest version on Taco Tuesday. It has so many of my favorite flavors all in one dish. (Recipe coming soon!)
