In my opinion, apples are the tastiest treats in the fall harvest, and I love the dilemma of deciding what to do with 20 pounds of apples fresh from the orchard.

As part of Cutco’s Fall Harvest Food Blogger Event, I’m sharing this delicious apple cake recipe. I’m excited to work with Cutco because their knives are the only knives I’ve used in my kitchen since I got married 14 years ago. The quality is fantastic, and I firmly believe in the importance of investing in high-quality kitchen equipment. It keeps you sane when you’re cooking most of your family’s food from scratch.

I’ve tried different gadgets for cutting, coring, and peeling apples over the years. The one with the crank only lasted a year before it broke. The push-down apple corer and divider works fine if the apples are perfectly symmetrical, but it doesn’t work on lopsided apples. The only thing that consistently works well with apples, I’ve decided, is a knife.

I like to use my big chef knife to cut the apples in half. This sharp knife can easily handle a tough core.

Then I remove the core with my little paring knife. This feels safer than using the big blade on this trickier part of the apple.

Cutco also carries vegetable peelers, which are nice and sharp for peeling off those skins. While it’s not necessary to peel apples in many recipes, I do prefer them peeled in a cake.

This apple cake is such a delicious fall dessert. Sweetened with maple syrup and flavored with the spices of autumn, this is a whole grain, fruit-filled dessert that you can feel good about feeding your family.

Ingredients

  • 2 1/4 cups white whole wheat flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 3 eggs
  • 1/2 cup melted coconut oil or butter
  • 1 1/4 cups maple syrup
  • 1 lb apples peeled, cored, and diced (2 medium apples)
  • 1 cup diced nuts optional

Instructions

  • Preheat the oven to 350 degrees and grease a 9 by 13 inch pan.
  • In a small bowl, stir together the flour, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
  • In a large mixing bowl, combine the eggs, coconut oil, and maple syrup. Add the dry ingredients to the big bowl, and mix to combine.
  • Stir in the diced apples (and nuts if you’re using them).
  • Transfer the batter to the baking dish, and bake for 35 to 40 minutes. A toothpick inserted in the center of the cake should come out clean.
  • For an extra treat, brush a bit of maple syrup on the cake and sprinkle a little cinnamon on top as the cake is cooling.
