Bacon Egg Avocado Pizza

My daughter has a habit of leaving the crusts on her plate. Whether it’s sandwich bread or a slice of pizza, there’s usually a crust left behind.
So when we tried Table5 Cornmeal Crust Pizza for the first time, I was surprised to see that her plate was clean. This pizza has such a delicious crust that even an anti-crust person can’t resist it. It’s a cornmeal-based crust with a great texture and flavor. I love that these pizzas are made in small batches and the ingredient lists are simple.
With the football playoffs upon us, my family moves into game day food planning mode. Here in Massachusetts, we’re excited to see our team going to the big game this year. It’s a great excuse to enjoy lots of fun appetizers.
The Table5 Four Cheese Pizza is the perfect canvas for a unique pizza to munch on during the game. Breakfast for dinner is one of my favorite things, so I put together this breakfast pizza with some unique toppings. They include bacon, eggs, avocado, and fresh chives.
On this pizza, I can pile 3 eggs along with the other toppings to make a delicious appetizer or light dinner. Better yet, make 2 pizzas with these toppings and you’ll have enough to serve a crowd during the big game. This recipe yields 12 appetizer servings or 6 meal servings. Don’t expect to have leftovers of this bacon egg avocado pizza (or any leftover crust on your kids’ plates!).
Ingredients
- 2 Table5 Four Cheese Pizzas
- 6 eggs
- 6 slices bacon chopped
- 1 ripe avocado chopped
- 1 tbs fresh chives
Instructions
- Cook the pizzas according to the package directions.
- Meanwhile, cook the bacon in a large skillet. Remove the bacon and leave the bacon fat in the pan. Fry the eggs sunny side up, or whatever style you prefer.
- Remove the pizzas from the oven and top them with the bacon, eggs, avocado, and chives. Serve warm.
