Hi guys. My name is Olena and I’m the author of iFOODreal, a blog with clean eating recipes. I’m sure being Annemarie’s reader, you know that eating clean means living a lifestyle free of processed foods, full of healthy fats, and rich in fruits and vegetables.
It also means eating organic, local, and seasonal as much as possible. So, that’s what my recipes are about, and today I’m sharing one of them. This clean eating Blizzard is a healthy, vegan, gluten-free, and refined sugar-free spin on the famous Dairy Queen’s Blizzard or McDonald’s McFlurry. It is something in between a soft serve ice cream and a milkshake.
Now, I understand the original Blizzard comes in a variety of flavors and I’m not even sure there is a plain one. See, coming from Ukraine I like to keep things simple, even with a homemade version of American junk food. I like to eat real food to taste the food itself and not 10 endless toppings and mix-ins.
Especially with two little kids, a clean eating Blizzard has to happen within two minutes in my household. I do not like to take the fun out of cooking. So, no soaking of cashews is needed for this two-ingredient blizzard. Instead, it’s just two frozen chopped bananas and some full-fat coconut milk.
Clean Eating Blizzard Recipe Tips
Hot weather is upon us and that’s when I make sure to have frozen ripe bananas on hand at all times. I buy A LOT of bananas, let some ripen, chop and pack each in individual BPA-free resealable sandwich bags, and freeze. Once blended, they turn into creamy soft serve ice cream. Add coconut milk and you get a blizzard. My kids love it! They don’t even notice the bitterness of cacao nibs, that’s how sweet and rich this clean eating blizzard recipe is.
Make sure to use ripe bananas (yellow with brown spots) and you won’t need any extra honey or maple syrup (but you could add a little if needed). You see almond milk in the photo because I thought I would need to add a few tablespoons, but I didn’t. You might, though, if the clean eating blizzard has a hard time moving around in your blender. Just add a tablespoon at a time.
This is a two-minute clean eating dessert recipe you’ll feel good about serving to your kids – naturally sweetened and full of healthy fats and antioxidants (if you add cacao nibs). Enjoy and be healthy!
Clean Eating Blizzard Recipe
Ingredients
- 2 large ripe bananas chopped & frozen, 7" to 8"
- 1/2 cup coconut milk
- Cacao nibs or chocolate chips optional
Instructions
- In a high speed blender, combine banana and coconut milk; process until smooth. Add a tablespoon at a time of any plant-based milk if the blizzard has a hard time moving around.
- Add cacao nibs or chocolate chips and pulse a few times or just sprinkle on top. Serve immediately. Makes 1 large or 2 small blizzards.
