Memorial Day marks the unofficial start of summer, and that means backyard barbecue season is here. There are so many things I love about summer, and summertime food is right up there on the list. As fresh produce becomes more available and varied with each passing week, delicious summer side dishes take center stage. I put together a roundup of 20 healthy potluck salads that you can feel good about eating at your next cookout.
For the pasta recipes, I recommend using whole grain pasta. If your crowd scoffs at whole wheat pasta, you can mix white pasta and wheat pasta while you’re transitioning your family to the whole grain version. With these delicious toppings, I don’t think they’ll even notice.
