I love having popsicles on hand for a refreshing summer treat. But store-bought popsicles tend to be full of unhealthy ingredients, so I like to make my own.

Homemade fruit popsicles are just about the easiest dessert you can make. The hardest part is waiting for them to freeze before you can eat them.

The coconut milk flavor in these popsicles is subtle, and the fruit really is the star here. I like to include a mix of fresh fruit according to what’s in season. There are so many great choices once summer is in full swing.

Tips for Making Homemade Fruit Popsicles

Liquid Base: I like to use my homemade coconut milk as a base for popsicles. Yogurt and fruit juice are other good choices. You can even puree some fruit and use that as the base. The possibilities are endless.

Fruit Filling: It’s fun to mix different colors and flavors in a popsicle. This version includes peaches, strawberries, pineapple, and kiwi. Blueberries and watermelon are other great options. Whatever fruit is on sale at your market will probably make a delicious homemade fruit popsicle filling.

Popsicle Molds: I have a couple different popsicle molds that I use. The Tovolo Groovy Pop Molds featured in this recipe are perfect for making large popsicles. I also use these Tovolo Star Pop Molds for smaller popsicles (seen in action in these banana fudge popsicles). After freezing the popsicles for several hours, it’s important to run them under warm water until the mold slides off easily. Don’t try to force it off, or you may break the handle.

Recommended Equipment


  • 2 cups coconut milk
  • 1/4 cup pure maple syrup
  • 1/4 cup chopped pineapple
  • 1/4 cup chopped strawberries about 2 strawberries
  • 1/4 cup chopped kiwi about half a kiwi
  • 1/4 cup chopped peaches about half a peach


  • In a medium bowl, stir together the coconut milk and the maple syrup.
  • Chop the fruit and place it in a separate bowl.
  • Divide coconut milk into 6 half-cup popsicle molds. Add a mixture of fruit to each popsicle mold, filling almost to the top.
  • Freeze the popsicles for at least 5 hours. When ready to serve, run each popsicle under warm water until it slides easily out of the mold.
