This Instant Pot rice pudding recipe couldn’t be easier to make. While I sometimes use brown rice to make baked rice pudding, I really prefer the texture of white rice in this pudding. Coconut milk keeps this recipe dairy-free, and it thickens up nicely even without the use of eggs.

I like to sprinkle cinnamon and fruit on top of the pudding after it cooks, but you could also add cinnamon and raisins to the pot before cooking if you’d like. Either way, you’ll love the flavor of this Instant Pot rice pudding. And you can’t beat the price – just $.27 per serving!

Ingredients

  • 3 cups coconut milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup uncooked long or short grain white rice
  • 1/2 cup pure maple syrup

Instructions

  • Pour the coconut milk, vanilla extract, and salt into the Instant Pot. Add the rinsed rice, then pour the maple syrup on top. Stir.
  • Cover the Instant Pot and turn the vent to Sealing. Cook on Manual high pressure for 18 minutes. Let the pressure release naturally for 10 minutes, then release the remaining pressure and open the pot.
  • Serve sprinkled with cinnamon and fruit. This pudding can be enjoyed warm or cold, but I prefer it warm. For the best texture, warm up the leftovers with a little extra coconut milk.

    This recipe burned the bottom of the instant pot even though I followed the recipe and rinced the rice extremely well before putting it in, not exactly sure what went wrong.

    1. I’m sorry to hear that. I’ve never had that problem with this recipe. What size/model Instant Pot did you use? I’m guessing you’re using a larger pot than mine and it needed a bigger batch to keep from sticking.
