Lettuce comes fast and furious from my farm share this time of year, so we eat a lot of salad. It’s great for me because a big, loaded salad is just about my favorite kind of meal. My kids, on the other hand. . .

They’re pretty good about salad, but they were happier about it when I used to buy store-bought dressing. Ranch was their favorite, and they liked Italian too. After I started scrutinizing ingredient labels a few years ago, store-bought salad dressings were among the first things to go. Lengthy ingredient lists with thickeners and other additives don’t make the real food cut.

I’ve worked hard to come up with homemade salad dressings that my children would like. There have been many frustrating dinners when they wouldn’t go for the salad because the dressing wasn’t good enough.

This mango salad dressing is one of the few dressing recipes I’ve come up with that everyone in my family enjoys. It’s easy to make because I keep chopped mango on hand in the freezer. The flavor combination is sweet and fruity, and it’s a great complement to any type of green salad. This dressing makes a tasty topping for chicken or fish, too.

Ingredients

  • 1/2 cup chopped mango
  • 1 tbs white wine vinegar
  • 2 tbs olive oil
  • 2 tsp honey
  • 1/4 tsp salt

Instructions

  • Place all the ingredients in a blender.
  • Process until smooth and transfer to a serving container. Dress the salad just before eating.
  • This dressing can be stored in the refrigerator for several days.
