I like to keep it simple around here. And on nights when my husband isn’t home for dinner, our meal is often beyond simple. Tonight I served whole wheat spaghetti with pizza sauce and corn on the cob to the children, while I ate zucchini spaghetti (I can’t get enough of this stuff).
I knew there might be some complaints from the peanut gallery, so I headed them off with the promise of dessert. My son had mentioned that some of the peaches I bought yesterday were ripe, so I put together peaches and cream for dessert. The children were impressed by the presentation and they enjoyed this easy little treat. It’s the simplest possible dessert to put together, but it’s so delicious.
