I’m back to meal planning again. Between travels and my daughter’s cooking camp, we haven’t had a normal week at home in ages.
Speaking of cooking camp, here are a couple of the dishes she came home with last week. It was so nice to get a break from cooking!
My favorites were the Mexican chopped salad and the black bean burgers on homemade burger rolls. These were the best burger rolls I’ve ever tasted! I can’t imagine going back to store-bought at this point.
Sadly, cooking camp is over, so I’m back to cooking dinner this week. I get to skip a night when we go out for my husband’s birthday. But other than that, I’ll be using the veggies from my farm share this week. No tomatoes or corn yet, but we do have lots of zucchini, lettuce, fennel, and herbs. I’m looking forward to trying the slow cooker steak carnitas bowls from Platings and Pairings. I’ve never cooked this type of steak in the slow cooker, and I’m hoping it comes out well.

Wednesday: Asian Salmon, Smashed Potatoes, Green Salad
Thursday: Omelettes, Bacon, Fruit
Friday: Homemade Pizza
