We’re trying to savor the last couple weeks of summer vacation before the kids head back to school. Although work demands are picking up for my husband and me, we want to enjoy the time we still have on this flexible summer schedule. There’s a little more time for “slow food” dinners and grilling outside, so we’ve got some of that in our meal plan this week.
Although it’s not typically a summer meal, we’re making shepherd’s pie on Sunday for some friends who are in need of comfort food at the moment. Whenever we cook for someone, we make a little extra for our own dinner, so shepherd’s pie is on the menu for us. After that, we’ll have a couple nights of grilling, including my favorite mango steak salad. Later in the week, we’ll be using zucchini, tomatoes, basil, and potatoes from the farm share. It’s tough to keep up with all the veggies this time of year, but I’m doing my best.
