My family was on their own for dinner over the weekend while I was away at Blog Brulee, a conference for healthy food bloggers. We planned it all out before I left so my husband wouldn’t have to deal with dinner decisions at the last minute. He got take-out from Boloco (local burrito shop) one night and made pork chops and mashed potatoes the other night. Not too bad!
During the rest of the week, we’re juggling soccer along with my son’s cross country schedule and my daughter’s running club in the evenings. Calzones are one of my go-to meals for weeks like this, as are pasta and soup. I’m trying out a new salmon recipe from Jeanette’s Healthy Living. Hopefully the new flavor combination will help my kids to enjoy this healthy meal.
