And just like that, it’s October. I’m watching my farm share turn from summer produce to fall. With the drought here in Massachusetts, some of the crops didn’t do as well this year. That’s part of the deal with a farm share – you take a risk along with the farmer. Fortunately, with a family of four, I don’t mind the smaller share of vegetables. It’s easier to get through everything when the quantities are limited. We can only eat so much arugula throughout the week. 🙂
My daughter wanted to make a zucchini lasagna recipe that she saw on a cooking show, so she was the chef for Saturday night’s dinner. And on Sunday, she and I had rice noodles with peanut sauce. This is a meal my son doesn’t enjoy, so we try to have it when he’s not home at dinnertime. The soccer schedule had him out of town with my husband on Sunday evening, so she and I enjoyed our peanut noodles.
I’m looking forward to welcoming October with a fall-themed sheet pan meal on Monday. Pasta, omelettes, and pizza will finish up the week on the more hectic nights. What are your favorite October meals? I’d love to hear about them in the comments!
