Can you believe it’s almost December?
We traveled for Thanksgiving, so we’re sadly lacking in the leftovers department. I needed some inspiration for my meal plan this week, so I cheated a little. I looked back at my meal plan from the week after Thanksgiving last year and plugged some of those recipes into my menu. That’s the beauty of having an online record of all my meal plans over the course of a couple years.
I don’t think we actually tried the Crock Pot Mexican Baked Potato Soup that was on my meal plan at this time last year. There’s usually one day a week when things get shifted around and the menu doesn’t go as expected. Hopefully that soup will work out for us this week because it looks delicious! Perfect for a chilly fall night.
I’m also looking forward to the beef stroganoff soup from Belly Full. I saw a recipe video for this soup on Facebook and I had one of those “must eat this a.s.a.p.” moments. Usually those moments are reserved for dessert recipes, so this one will probably be delicious. I can’t wait to try it.
New Resource Alert: I posted a round-up of 60 healthy dinner recipes that cost less than $1 per serving. Add a few of these to your meal plan so you can pay off your holiday shopping a bit more easily this year!
