We’re in the home stretch before winter break. My kids are hanging in there, but we’re all looking forward to a break from waking up on these dark early mornings. With last-minute Christmas preparations on my to-do list this week, I’m getting by with a simple meal plan.
Taco night, pasta dinner, and salmon are some of the recipes I turn to when I need to keep things easy at dinnertime. I’m also trying a new recipe this week that looks delicious. This Cauliflower Rice Chicken Enchilada Casserole is the perfect way to sneak some cauliflower onto my kids plates.
And I’m making a broccoli soup with a bunch of broccoli I found in my freezer. I don’t have a recipe for this one, so I’ll just wing it. That’s the great thing about soup – you can just keep adding things until it tastes good!
