We’ve got a relatively easy week for meal planning this week. The only dinnertime conflicts are over the weekend during my son’s basketball games, but we can be flexible about timing on those nights. And with our Patriots in the playoff game on Sunday, I’m getting away with grilled chicken nachos for dinner. It’s definitely an easy meal to put together, and everyone in my family loves it.
Later in the week, I’m trying a new Instant Pot recipe from this Instant Pot Cookbook I got for my birthday. I love that I can make the pasta and the sauce in the same pot. Hopefully the pasta texture will be just right. I’m always skeptical about that, but it’s worth a try.
