I’ve got some fun dishes in this week’s meal plan. We always love breakfast for dinner, so I’m trying the Taco Egg Muffins from Food Faith Fitness. They look so easy and delicious. Hopefully we’ll have a few leftovers for the freezer. And one of my most popular recipes lately, these macaroni and cheese muffins, is on the menu for the first time in ages. I know my kids will still enjoy them.
I’m also forging ahead with my Instant Pot. The Chicken Tikka Masala could also be made in a slow cooker if you don’t have an Instant Pot. Honestly, I have no idea how my children will respond to this recipe, but it’s worth a shot. I’m always trying to introduce new flavors. They surprise me sometimes when they enjoy a dish that I didn’t expect them to enjoy.
I try to balance out the menu with familiar recipes and new ideas, so we’ll have some of our standard dinners on the other nights. Homemade pizza, pasta night, and burgers are no-brainers around here. It’s nice to have a few nights when I know everyone will be happy with their dinner.
