With our Patriots in the Super Bowl this weekend, big things are expected for dinner on Sunday. I looked back on my meal plan from 2 years ago when the Patriots won the big game, and I’m replicating that menu for this year’s festivities. It worked last time. . .
Superstition aside, sometimes it’s just easier to copy an old menu than to think up something new. That’s the beauty of tracking your meal plans. When times get busy, you can simply replicate an old menu. It’s one less thing to have to think about.
During the week, I’m pulling things out of the freezer on a few of the nights. I made this beef stew last week, and I froze the leftovers for a second dinner. There’s also some barbacoa in the freezer that I cooked in the Instant Pot a few weeks back. We’ll use that for tacos later in the week. And I’m looking forward to trying the Vegetarian Thai Fried Quinoa from Eat Good for Life. We don’t care for tofu, so I’ll probably just leave that out. The flavors sound so good in this dish.

Monday: Instant Pot Beef Stew
Tuesday: Vegetarian Thai Fried Quinoa
Wednesday: American Chop Suey, Green Salad
Thursday: Chipotle Barbacoa Tacos
