We made it to February vacation week! It’s always such a relief to be able to sleep in and take our time with things. It seems like we’re rushing around a lot more than I’d like during the regular school days.
I don’t work as much during the vacation week, which gives me more time to deal with dinner. My daughter is getting braces this week, so I’m planning a few “soft meals” for the first couple days in case she’s too sore for regular food. I’m also trying a beef and broccoli recipe in the Instant Pot. This looks like a great alternative to takeout.
Honestly, I’ll probably move things around a bit in the later part of the week. I’d love to get some dinner help from my kids, and they may have other ideas about what they’d like to make. But I still feel better having a plan in place in case I need it.
