We’ve been enjoying some amazing weather for February in Massachusetts. This week’s meal plan starts with sliders on the grill with a side of potato salad and cole slaw. We’re trying to pretend it’s summer.
But really, the cold will come back and it will snow again. It always does this time of year. So for the rest of this week’s meal plan, we’re back in the kitchen cooking dinner. I’m trying a few new recipes from other bloggers. The baked coconut chicken tenders from My Food Story look delicious. I’m sure the kids will love them with the mango dipping sauce. And the beef and veggie ramen from Chelsea’s Messy Apron looks like a great way to use some of the healthy gluten-free ramen noodles I’ve been getting at Costco.
Later in the week, I’m trying chili lime fish tacos from Pinch of Yum. I often order fish tacos when I’m out to eat, but I don’t think I’ve ever actually made them. Hopefully they’ll be easy to put together.
