I’ve got lots of healthy, delicious recipes in this week’s meal plan. It’s a Mexican-heavy menu. I could eat Mexican food every night of the week and be happy, but I usually only make it once a week. My family enjoys it too, so I don’t think anyone will be complaining about the repetitive theming.
One of the Mexican dishes is a new recipe I’m trying this week. When I saw the video for the beef enchiladas from the Chunky Chef, it was one of those moments where I wanted to reach through my computer screen and grab one. I immediately went to my meal plan and added the recipe. I know it will be delicious.
I’ve been making chili lime salmon for a while, so I figured it was time to take some pictures and post the recipe. That will be coming soon! It’s so flavorful, even a salmon skeptic will be convinced by this one.
