Dinnertime is a bit of a minefield for me this week. With my husband out a couple nights and tracks meets and soccer on several other nights, I need to get creative to make sure everyone has a decent dinner each night.
I’m trying a couple new recipes that are portable for the nights when we’re running between track meets and soccer practice. The barbecue chicken calzones will taste great with my homemade barbecue sauce and pizza dough. I’ll make some extra dough for later in the week, when I’m trying the Mini Capreze Pizza Muffins from Cafe Delites. I imagine everyone will loves these, too.
On a night when everyone is home, I’m trying out a new recipe for baked fish tacos from Show Me the Yummy. I always like fish tacos when we go out to dinner, and this baked version looks easy enough to make at home.
