As I sat down to do my meal plan this week, I knew it would be a week when I would NEED a plan.
My kids are extra busy this week with track meets, soccer practice, and tech week for my daughter’s play. And on top of that, we just got a puppy!
It’s my first dog and I have no idea what I’m doing, so I know she’ll take up lots of my attention this week. That’s why a meal plan with the easiest possible recipes is in order.
My mother’s day dinner menu has been the same for the last several years. The mango avocado steak salad is one of my favorite meals, and it’s easy enough for my husband and kids to put together. It’s nice to have an old favorite to fall back on for a special occasion.
And for the rest of the week, I’m depending on easy dinners that are popular in my family. There’s nothing experimental about the pizza, tacos, pasta, or eggs we’ll be eating. This is my default “I can’t really handle much at dinnertime” menu. We’ll get by, and hopefully next week will be a little more interesting.

Saturday: Instant Pot Chili (recipe coming soon!), Cornbread
Sunday: Mango Avocado Steak Salad
Monday: Pizza, Veggie Sticks
Tuesday: Chicken Tacos with Veggies
Wednesday: Pasta with Marinara, Green Salad
Thursday: Eggs, Breakfast Sausage, Fruit
