This week’s meal plan is full of veggies. I have lots of pesto in my freezer from all the basil I got from my farm share this summer, and we’ll have some of it with gnocchi one night. Green beans, taco salad, and lots of green side salads are on the menu as well.
We’re going apple picking this week, so I’m planning for apple chicken curry on Thursday night. This is one of my favorite dishes that I remember from childhood, and it’s that much better with apples we picked ourselves. There will probably be applesauce and apple pancakes on our horizon, too. The apple harvest is one of the best things about fall, isn’t it?
