This week’s meal plan is as easy as I could make it. I’ll be out a few nights, and I wanted to have all the ingredients on hand for my husband. Even with some activities for the kids, this is a simple menu that he can manage.
The weeknight meals include quesadillas, an egg bake, pasta, and a rice noodle dish. These dishes are all simple to make, and the kids should be happy enough with them. Hopefully there will even be a few leftovers for lunches.
During the weekend, we’ll enjoy burgers, roasted chicken, and lots of fresh veggie side dishes. It’s still nice to eat outside on these early fall nights.
