I’m happy to be planning lots of cozy meals this week. That’s one of the best things about winter. We eat our share of comfort food to distract us from the dropping temperatures and dwindling daylight.
I’ve got several slow cooker meals on this week’s menu. I recently bought a new oval slow cooker after my old round one got a crack in it. It’s fun experimenting with recipes in this new slow cooker. I’m especially looking forward to the spaghetti squash with meat and tomatoes. It’ll be my first spaghetti squash meal this year, and I love this delicious healthier pasta alternative.
Aside from the Crock Pot meals, we’re having eggs, taco salad, and pasta throughout the week. These are easy meals that everyone enjoys, so they’ll help balance out the experimental meals that we’re trying on the other nights.
