This week’s real food meal plan is another juggling act with our evening schedule. We have something going on every night this week, so I’ll have to focus on a tight time window every night to make dinner happen. I need to be in several places at once on Wednesday, so I’m waving the white flag and buying takeout for dinner that night. Thursday is the closest thing to a normal evening, and I’m looking forward to trying a Cobb salad recipe from the Messy Baker.
We went away for Memorial Day weekend, and I always try to have an easy dinner waiting in the refrigerator or freezer for our return from a trip. On Monday, we’re coming home to Taco Night. Beans and meat are ready in the freezer, and the lettuce is washed and waiting in the refrigerator. By washing the lettuce as soon as I bring it home from the farm, I can easily use it right when I need it.
