Is it really June already?
My kids have a few weeks left of school, so we’re in the season of soccer practice, band concerts, and other end-of-the-year hoopla. We’re also enjoying the first few weeks of farm share veggies. At this point in the year, I’m coming home from the farm with lots of greens, including lettuce, arugula, kale, and spinach. It’s ambitious, but I’m trying to make up for our winter deficit of greens.
My husband and I celebrated our 20 year college reunion this weekend. It was great to see old friends from Holy Cross, and we got to enjoy dinner at the college while the kids were home with a babysitter. I always appreciate when someone else does the cooking!
This week’s meal plan includes lots of fresh produce, along with some easy family favorites like burgers, pasta, and quiche. I’ll be at a food blogging conference at the end of the week, but calzone should be easy enough for me to put together before I leave. In the interest of full disclosure, there’s a chance that I won’t get to it and they’ll be ordering pizza. The spinach salad will definitely be waiting for them, though. 🙂

Monday: baked salmon, kale chips, roasted potatoes
Tuesday: burgers, stacked watermelon salad
Wednesday: pasta with arugula pesto
Thursday: quiche, salad
Friday: calzone, strawberry spinach salad
