I’m just getting back from a weekend in Philadelphia at the Eat Write Retreat blogging conference. It was a fantastic, whirlwind weekend full of great food, information, and conversation. It was also a welcome break from my kitchen, but now I’m ready to jump back into cooking.
I knew I would have a lot of catching up to do on Monday after getting home late Sunday night, so I made Monday night’s dinner last week before I went away. That may sound a bit neurotic, but I really like the peace of mind of having dinner planned and ready on a busy day. Since I was making calzones for my family to eat while I was away, I made a big batch and froze some for Monday.
I’m trying new recipes on Tuesday and Wednesday. One is a sesame noodle recipe from Jessiker Bakes, and the other is a one-pan Greek pasta from Simplify Live Love. Both promise to be ready in 20 minutes, and they’re from my Recipes to Try Pinterest board.
The end of the week is full of festivities for my daughter’s 9th birthday, and that means a couple more nights off from cooking for me. I could get used to this!
