Last week, my meal plan was thrown for a loop. My 11-year-old son was sick with a mystery virus all week, with a fever and a host of other uncomfortable symptoms. After taking care of him all day, I had less time to shop and cook than I had expected when I put the plan together. Even so, I was able to work loosely with the meal plan to get dinner on the table. It’s so helpful to have a plan in place when an unexpected challenge presents itself.
We’re all healthy this week, and hopefully some nourishing food will keep our immune systems strong. This beautiful Rainbow Stir-Fry from Vegetarian Times looks like just the thing we need. The rest of the week will be filled with familiar, comfort food meals that are perfect for the busyness of December.
