Last week’s meal plan turned into a bit of a jumble. With a blizzard passing through and dumping 2 feet of snow here in Massachusetts, we were homebound for a couple days. Fortunately I had lots of food on hand, and we switched the days for a few of the meals based on our schedule change.
My daughter made an amazing batch of homemade manicotti during the snowstorm, and the kids also made some homemade peppermint ice cream with leftover candy canes. It was fun to see my son at work with a mortar and pestle, crushing the candy canes into bits.
Hopefully we’ll have less weather drama this week. I have lots of cozy dinners on the meal plan. I’m a bit fixated on cauliflower lately, and I’m excited to try this Cauliflower and Leek Pizza. I don’t know if my children will like it, but I think my husband and I will be able to manage the whole pizza on our own if needed.

Tuesday: Mashed Cauliflower and Leek Pizza
Wednesday: Pasta with Marinara, Green Salad
Thursday: Homemade Frozen Waffles, Bacon, Berries
Friday: Out to Dinner
